Eight Steps to Winding Down

Graham crackers butter vanilla sugar salt.

Bittersweet chocolate chopped chunky and fine.

Top up with boiled chocolate batter and tamp the tray on the counter to remove any bubbles.

More chocolate…

…and more graham crumbs (don’t forget to dust away the stragglers using a dry pastry brush, otherwise they will scorch and char on the hot tin).

While they cool, make some dinner, drink some wine, watch some crappy television programme, stand on the balcony staring aimlessly at the yard and imagining how soon the leaves will return, the grass will return, the flowers will return, the temperatures that don’t shrink your shoulders up to your ears against the chill will return.

Top with whipped mascarpone custard cream…then stow in air-tight containers, safe till tomorrow morning when they’re to be delivered to a friend in honour of a birthday. Damn! The whole house smells so good…perhaps perhaps perhaps, I could eat just one?

      To be honest, it is stolen from Martha Stewart, in part. The cupcakes are her recipe for Chocolate Graham Cracker Cupcakes…the mascarpone cream is just two eggs, separated and the yolks beaten with 2 T of sugar, then you add about a cup of cheese, then whip the egg whites till they’re stiff and fold them into the yolks and cheese along with two drops of vanilla.

      Sooooo great.

    I am cursing myself for not having taken at least a bite… good thing I not only have a key, but also know where the back-up stash is hidden away in case of emergency.
